Technically though the flat side of the washer faces the bolt head. The side that crushes should face the pan.

It ‘feels right’ to put the flat surface against the largest or non-moving part (ie the exhaust gasket flat against the cylinder) but I’m not sure that’s valid. Likewise, I can’t make myself put the curved surface of a metal washer against a part, it must go next to the nut or bolt head, in my mind.

Simple fact is that metal washers rarely fail. The biggest risk of failure is more likely to come from forgetting to reinstall it. Side note it's interesting that the torque values are 32.5 ft-lb for the aluminum washers and 51.6 for the copper or black metal ones, and no thread sealer is required for the front diff.
