Depending on which way the boat is tilting, drill a small hole in the bottom of the pontoon on the side that's tilting down. The hole will allow water inside the pontoon a place to escape. Make sure that you don't drill a hole so large that it will be impossible to repair. The optimal size is between 5/16 and ¾, but no larger.

I'm gonna guess it would be a problem. It might not teeter, but I think the middle log would always be so deep in the water that it would slow you down a lot. If the middle log floated the middle more than the outer logs float the sides, it would create some bad stress too.

And a little bit of diameter increase does a lot in terms of flotation. I did the math on this a long time ago and I believe that it worked out that a 26" log gives about 30% more flotation than a 23 inch pontoon. More flotation= pushing less water out of the way= better ...
