Canvas cannot detect if you are using an extension, at least not to my knowledge. However, if something like that is suspected, it can still be investigated. I've seen people have to come in and retake a quiz in front of the professor to make sure they weren't cheating because they failed the exam but got all 100s on the quizzes.
